There are usually amazing aromas wafting through the Education & Culinary Center kitchens and this day was no exception. Chefs Ashley Pado and Peter Rosenberg were grilling coulottes, another name for the sirloin strip steak. These tender, juicy cuts of beef had been rubbed with a mixture of garlic, chili powder and brown sugar — yum! Always seeking flavorful secrets from these fine culinary folks, I asked the chefs to share the recipe. Here it is … Chef Peter’s Garlic & Chili Rub. Try it on your favorite steak or roast! Or, try one of these rub and marinade recipes to add an extra kick of flavor to your favorite cut of beef!
- 1 Tablespoon fresh garlic, chopped
- ¼ cup chili powder
- 1 teaspoon paprika
- 2 Tablespoons brown sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- ¼ teaspoon cayenne pepper
- ¼ cup olive oil
- ¼ cup water
- Stir ingredients together.
- Apply rub to the outside of the steak or roast.
- Grill to desired doneness.
